Why is mobility important?

Mobility allows you do move more freely and have stability in greater ranges of motion! Increased mobility can also help reduce pain in joints that are caused by tight/weak muscles.

What is the first thing I should start doing when looking to lose fat and keep it off?

Walk and build muscle!

Should I track my calories?

Short answer, it is up to you. I personally am a fan of focusing on eating whole natural foods and prioritizing protein at each meal. This is going to get you 90% of the way there nutritionally.
